16 ozchicken breast - fresh or thawed, boneless, skinless
2Textra virgin olive oil
2Tsweet heat spice rub
sea salt and pepper - fresh ground
Sweet Heat Spice Rub
Remove excess moisture from chicken by placing them between layers of paper towel and let sit for 5 minutes.
Add chicken to slow cooker and season with fresh ground salt and pepper to taste.
Drizzle with 1 T olive oil and 1 T honey. Sprinkle 1 T sweet heat spice rub.
Flip chicken and repeat the last 2 steps.
Cook on low for 6-8 hours (or longer)

Place chicken covered on a microwave-safe glass dish and use your microwaves defrost setting to quickly defrost the chicken.
Place chicken in a plastic zip-lock bag and put it in a shallow bowl filled with cold water, let sit for 5 minutes. Repeat.
