A king cake is a yummy Mardi Gras tradition. A King Cake is a rich brioche dough and made with a variety of fillings like chocolate, cinnamon, and cream cheese. This iconic sweet roll is delicious and festive, iced with green, gold, and purple. This Mardi Gras treat is eaten between January 6, known as King’s Day or Twelfth Night, and Mardi Gras know as Fat Tuesday. The colors of the icing are the colors of Mardi Gras) and have a deeper meaning. Gold represents power, green is associated with faith, and purple illustrates justice. King cake is baked in a ring, no center and has a surprise buried inside the batter - most cakes today are baked with a plastic baby inside, but traditional it could be a red bean, a gold coin or ring.

GLAZE:
1-1/2cupsconfectioners' sugar
2tlemon juice
2 to 3Twater
2 cupsgranulated sugar colored with food coloring pastes: - green, purple, and yellow
Instructions
Dissolve yeast in warm water.
Add milk and about 1/2 cup of flour. In a large bowl, blend butter, sugar, salt, and eggs.
Add yeast mixture and mix thoroughly.
Gradually, add 2 1/2 cups flour to make a medium dough.
Place in a greased bowl and brush with melted butter.
Cover with a damp cloth and allow to rise until double in volume, about 3 hours.
Use 1 cup or more flour to knead dough and roll into a 4-5 foot long rope.
Form into an oval on a 14 x 17" greased baking sheet, connecting ends of the rope with a few drops of water to make a good seal.
Press the doll, bean, or coin into the dough from the bottom.
Cover dough ring with a damp cloth and let rise until double in volume, about 1 hour.
Brush with egg.
Bake at 325° for 35 to 45 minutes or until lightly browned.
Cool on a wire rack.
For glaze
Combine the confectioners' sugar, lemon juice and enough water to achieve desired consistency.
Spread over cake.
Sprinkle with alternating bands of colored sugar.

Growing up in Mandeville, Louisiana our family bought our King Cake across the Lake at Gambino's Bakery in Metairie. We made this trip to buy most of our special occasion cakes. Gambino's will ship you a king cake if you aren't a baker.A King Cake should be delicious - not the dried out, bland pastry with neon frosting made by most grocery stores, so either make your own or order one from Gambino's. You should actually want to eat the cake - not just find the baby.
