New Orleans style red beans and rice is a staple in New Orleans cooking and can be served as a main dish or a side dish.

1 1/2cupsAndouille sausage - cut into 1/2 inch rounds
30ouncecanned kidney beans - drained and rinsed
16ozcanned whole peeled tomatoes - chopped
1/2teaspoondried oregano
salt and pepper - to taste
1/2teaspoonpepper
Hot sauce to taste
6cupswhite rice - cooked
Instructions
In a large skillet over low heat, cook sausage and Tasso for 5 minutes.
Stir in onion, green pepper and celery garlic; sauté until tender.
Add Cajun seasoning, to taste.
Add salt and pepper, to taste.
Pour in beans and tomatoes with juice.
Season with oregano, salt and pepper.
Simmer uncovered for 20 minutes.
Serve over rice.
Notes
Red beans and rice can be served as a side dish with fried chicken or serve this as a main dish with a side of garlic sautéd chard or kale and cornbread. Yum!
