The warm honey brie with the salty pistachios and cranberry orange dressing is truly decadent.

Ingredients

Salad

  • 1 Granny Smith Apple - diced
  • 3/4 c. brie - warm
  • 3/4 c. salted pistachios shelled
  • 8 large Romaine leaves - washed, dried and torn
  • chopped red onion to taste

Dressing:

  • 1/4 c. olive oil
  • 1/4 c. champagne vinegar
  • 1 T finely chopped mint
  • 1 t. salt
  • 1 T orange juice
  • 1 T honey

Instructions

  • Let brie reach room temperature.
  • Warm in a 300 degree F oven for 5 minutes
  • Tear the lettuce leaves and mix together with apple, cheese, and nuts in a large bowl. In a jar or small bowl, whisk together the dressing ingredients. Pour over salad and toss.

Notes

Warming the brie is optional but warmed brie is extra creamy and pairs exceptionally well with crispy apples and greens.  The honey orange dressing pairs perfectly.
