This is my favorite way to serve potatoes. I love the crispy outside and the fluffy inside. I serve these with a side of sour cream for dipping.

Instructions
Peel potatoes.
Cut potatoes into 1 1/2 inch cubes.
In a microwave-safe bowl toss potatoes with oil.
Toss with seasonings and salt and pepper to taste.
Preheat oven to 400 degrees.
Microwave on high for 5 minutes. Stir and microwave for an additional 2 to 3 minutes, you want the potatoes to be pretty soft.
Spread potatoes in a single layer on a sheet pan and roast for 20 minutes.
Serve hot.
Notes
If you are not a fan of the microwave, you can follow the same recipe just add an additional 30 to 40 minutes in the oven.
