1 1/2cupsfresh squeezed lemon juice - Approx. 6 lemons
2 cupsfresh pineapple - cut into 1 in cubes
1cupmango - pureed
4 to 6cupscold sparkling water
Prepare a simple syrup using 1/2 cup water and 1/2 cup sugar.
Combine sugar and water in a saucepan. Bring the water and sugar to a boil, stirring, until sugar is dissolved. Remove from heat and add mint. Muddle mint. Allow simple syrup to cool, and refrigerate.

Puree pineapple in a food processor or blender until smooth
Combine lemon juice, pineapple puree, and mint simple syrup. Add 4 cups of sparkling water. Mix well. Taste, continue adding water until you reach the desired balance of sweet and tart.
