4clovesgarlic minced - if you have roasted garlic, use that
Salt and Pepper - to taste
Slice very thinly with a mandolin
As you slice place slices in a large bowl of salted ice water
Dry potatoes between paper towels
Toss with olive oil and season with salt and pepper
Place on a wire rack over a foil-lined sheet pan at 450 degrees for about 30 minutes or until browned and crispy.
To Deep Fry:
Season potatoes with salt and pepper
Deep Fry on high for 1- 2 minutes, until browned and crispy
Drain on paper towel
Once potatoes are cooked sprinkle with blue cheese crumbles and minced garlic
Place under a broiler set on high until cheese is bubbly and starting to brown.
