Instructions
Preparation
Working in batches place watermelon and a little coconut water in a blender and blend until smooth.
Pour mixture into a pitcher.
Continue this process for remaining watermelon and coconut water.
Add sparkling water, lime juice, and ginger juice to the pitcher and stir to blend.
Refrigerate until cold, at least 3 hours. Keep chilled. Stir before serving.
Serve over crushed ice and garnish with a lime wheel if desired.
Notes
Bottled ginger juice is available at most grocery stores and certainly at Whole Foods. Bottled juice is so much more convenient, but for the purists out there here's how to make ginger juice. *To make ginger juice, peel a 3-ounce piece of ginger and grate it over a plate, put the grated ginger in a fine-mesh sieve and press to release the juices.
