Pumpkin seeds or toasted pine nuts - optional for topping
Remove watermelon from rind and dice into bite-size pieces.
Set aside in a serving bowl.
Toss with feta cheese.
Combine lemon juice, olive oil, mint leaves, black pepper and a dash of your favorite hot sauce in a small bowl whisk together.
Pour on watermelon and feta.
Let sit refrigerated for about an hour.
Just before serving top with pumpkin seeds or pine nuts.
I love this simple salad. it always surprises guests, since most people don't think of combining cheese and watermelon.Growing up in the south we salted our plain watermelon, so adding a slightly salty feta, seems perfect. Variation: Add heirloom tomatoes, substitute feta for a sharp Italian cheese and basil instead of mint. Vey yummy.
