Ooey Gooey Cheesiness in a casserole with potatoes - what's not to love? Creamy and delicious just like the real thing. When my daughter became a vegetarian she really missed the Cracker Barrel™ Hash Brown Casserole (and so many other vegetarian dishes restaurants sneak chicken broth into).
2poundsfresh or frozen hash browns - if frozen, thawed
1/2cupbutter - melted
1cupcream cheese, room temperature
1pintsour cream
1tgarlic powder
1/2tonion powder
1/2tItalian seasoning blend
1/4tcelery seeds
1tsalt
1tpepper
1/2cupsweet onion - finely chopped (optional)
2cupsgrated sharp cheddar cheese - 1/2 cup reserved
Instructions
Preheat oven to 400° F. Prepare an 11 x 14-inch casserole or baking dish by buttering the sides or using your favorite cooking spray.
In large bowl, combine all ingredients (except 1/2 cup of reserved cheese) and fold ingredients to blend.
Spread potato mixture evenly in the prepared pan.
Top with reserved cheese.
Bake for 45 minutes until top is golden brown. If the top is getting too brown cover with foil. If the top isn't brown enough, broil for 5 minutes before serving.
Let rest 5 minutes before serving hot.
Notes
Stress-free Entertaining Option:Place everything in a slow cooker and cook overnight and you'll have one less thing to do for breakfast the next morning. I use this method often during the holidays or when I have a house full of guests. Super easy and so good.
