Homemade onion rings are so easy to make. I was visiting home from college the first time I remember making homemade onion rings. I was covered in flour (and so was the kitchen). I'm much neater now that I have to do the clean-up but the recipe has remained pretty much the same. If you want a little spice, add a teaspoon or 2 of Tabasco. to the milk mixture.
1large Vidalia onion - cut into 1/4-inch thick slices
1 1/4cupsall-purpose flour
2tcayenne pepper
1tfine sea salt
1tblack pepper
1tbaking powder
1tsalt
1egg
1cupmilk - or as needed
Instructions
Heat the oil in a deep-fryer to 365 degrees F
Cut onions into 1/4 inch thick slices and separate into rings, and set aside.
In a small bowl, stir together the flour, baking powder and spices.
Coat onion slices with the flour mixture coating well; set aside.
Whisk the egg and milk.
Dip the floured rings into the batter to coat, then place on a wire rack on a foil-lined sheet pan, so the batter can setup.
Coat in flour again
Deep fry in batches for 2-3 minutes until golden brown
Notes
Try using a red onion for onion rings is you are topping burgers or other sandwiches.You can freeze these in a single layer on a sheet pan. Then transfer to bags.
