Watermelon and Feta Salad

Refreshing, light and delicious. This super easy watermelon and feta cheese salad recipe is sure to be a big hit.

The bright sweet flavor of sun-ripened watermelon combined with an earthy, slightly salty feta cheese makes the perfect summer side salad.


  • 1 small seedless watermelon
  • 1/2 cup feta cheese
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • 3 or 4 chopped and crushed mint leaves
  • Black pepper to taste
  • a dash of your favorite hot sauce
  • Pumpkin seeds or toasted pine nuts optional for topping


  1. Remove watermelon from rind and dice into bite-size pieces.
  2. Set aside in a serving bowl.
  3. Toss with feta cheese.
  4. Combine lemon juice, olive oil, mint leaves, black pepper and a dash of your favorite hot sauce in a small bowl whisk together.
  5. Pour on watermelon and feta.
  6. Let sit refrigerated for about an hour.
  7. Just before serving top with pumpkin seeds or pine nuts.

Recipe Notes

I love this simple salad.  it always surprises guests, since most people don't think of combining cheese and watermelon.

Growing up in the south we salted our plain watermelon, so adding a slightly salty feta, seems perfect. 

Variation:  Add heirloom tomatoes, substitute feta for a sharp Italian cheese and basil instead of mint.  Vey yummy.
