For a lighter burger option try the Stuffed Turkey Burger with Pesto and Bacon recipe. the feta cheese adds a nice salty flavor. This Stuffed Turkey burger will be a welcome addition to your backyard barbecue. Turkey bacon would also be an option to reduce calories, but really nothing beats “real” bacon.

 

Stuffed Turkey Burger with Pesto and Bacon

I love the combination of bacon and pesto, but if you want to reduce calories this is still delicious without the bacon. 
I'm also using a jarred pesto to make this an easy stress free recipe but you can certainly make your own homemade pesto - it's pretty easy.

Ingredients

  • 1 lb. lean ground white-meat turkey
  • ¼ cup bottled basil pesto sauce - choose your favorite
  • 4 oz. feta cheese
  • Hot sauce - a dash or more, to taste
  • 8 slices cooked bacon*
  • 4 Ciabatta rolls
  • Shredded spinach leaves
  • Tomato slices

Instructions

  • Make 8 thin turkey burger patties.
  • Combine next 3 ingredients in a large bowl until just blended.
  • Spread cheese and pesto mixture on 4 of the turkey burger patties
  • Top each with a remaining turkey burger patty and press edges together to seal in stuffing
  • Wrap pre-cooked bacon slices in a single layer tin foil
  • Grill turkey burgers and foil-wrapped bacon on a covered grill over medium-high heat (350° to 400°). Grill for 5 to 6 minutes on each side or until done.
  • Place turkey burgers on Italian roll and top evenly with spinach, tomato, and bacon slices, and cover with roll tops.

Notes

  • I like to cook my bacon on a wire rack placed on a foil lined sheet pan and bake in the oven at 400 degrees F for about 10 minutes, time varies based on the thickness of the bacon, so keep an eye on it.  The bacon cooks evenly and crispy + some of the fat drains off.

    Having the cheese mixture locked between the two patties sets up a flavor explosion. You gotta try this. I also did it with beef patties for us less health conscious.
