Ingredients

  • 1 1/2 cups fresh squeezed lemon juice - Approx. 6 lemons
  • 2 cups fresh pineapple - cut into 1 in cubes
  • 1 cup mango - pureed
  • 1/2 cup water
  • 1/2 cup sugar
  • 4 to 6 cups cold sparkling water
  • 2 T fresh mint

Instructions

  • Prepare a simple syrup using 1/2 cup water and 1/2 cup sugar.
  • Combine sugar and water in a saucepan. Bring the water and sugar to a boil, stirring, until sugar is dissolved. Remove from heat and add mint.  Muddle mint.  Allow simple syrup to cool, and refrigerate.
  • Or ** If you need to make this quickly or just don't want to wait for the syrup to cool combine the water and sugar in a container with a lid and shake vigorously until sugar has dissolved.  Add mint and muddle
  • Juice the lemons (you want about 1 1/2 cups of lemon juice). You can strain the juice if you would like pulp-free lemonade.
  • Puree pineapple in a food processor or blender until smooth
  • Combine lemon juice, pineapple puree, and mint simple syrup.  Add 4 cups of sparkling water.  Mix well.  Taste, continue adding water until you reach the desired balance of sweet and tart.
  • Serve over ice and enjoy!

Notes

You can adjust the proportions of lemon juice to simple syrup to change the sweetness or tartness of the lemonade to your preference.
Try replacing still water with sparkling water for a bubbly treat.

Pueblo Butternut Squash Piñon Nut Sweetbread is traditionally served to parties of Rio Grande Pueblo nut pickers in September when piñon nuts were being picked from the mountain slope trees. Families would (and some still do) camp for many weeks in traditional areas reserved to clans. In the recipe you can use either cooking-type pumpkin (these have necks and thick, meaty bodies, not like jack o' lantern pumpkins) or a sweet bright orange squash, like butternut. […]
