Sparkling Pineapple Mint Recipe

There’s nothing better than a perfectly ripe pineapple, pair it with a little bit of mint and add it to lemonade and you have an amazingly different lemonade. A tropical twist on classic lemonade.

This is an amazing tropical twist on classic lemonade.  Add rum and you've got a  yummy mojito.


  • 1 1/2 cups fresh squeezed lemon juice Approx. 6 lemons
  • 2 cups fresh pineapple cut into 1 in cubes
  • 1 cup mango pureed
  • 1/2 cup water
  • 1/2 cup sugar
  • 4 to 6 cups cold sparkling water
  • 2 T fresh mint


  1. Prepare a simple syrup using 1/2 cup water and 1/2 cup sugar.

  2. Combine sugar and water in a saucepan. Bring the water and sugar to a boil, stirring, until sugar is dissolved. Remove from heat and add mint.  Muddle mint.  Allow simple syrup to cool, and refrigerate. 

  3. Or ** If you need to make this quickly or just don't want to wait for the syrup to cool combine the water and sugar in a container with a lid and shake vigorously until sugar has dissolved.  Add mint and muddle

  4. Juice the lemons (you want about 1 1/2 cups of lemon juice). You can strain the juice if you would like pulp-free lemonade.
  5. Puree pineapple in a food processor or blender until smooth

  6. Combine lemon juice, pineapple puree, and mint simple syrup.  Add 4 cups of sparkling water.  Mix well.  Taste, continue adding water until you reach the desired balance of sweet and tart.

  7. Serve over ice and enjoy!

Recipe Notes

You can adjust the proportions of lemon juice to simple syrup to change the sweetness or tartness of the lemonade to your preference.

Try replacing still water with sparkling water for a bubbly treat.
