My daughter-in-law was talking about this recipe yesterday and mentioned that this recipe for sweet heat spice-rubbed chicken is now a weekly staple for her family, which made me wonder why it wasn’t a staple in my home anymore.
I already had chicken thawing in the fridge, so I grabbed my slow cooker, my sweet heat spice rub and put it in the slow cooker so dinner tonight will be both tasty and low-calorie. This chicken is filled with amazing flavor and will be a new family fav.
Slow cooker chicken is definitely a go-to for me, but sometimes I want my chicken on the dry side so I can shred it to top salads or a baked potato. This is the perfect slow cooker chicken for just that purpose.
Slow Cooker Sweet Heat Spice-rubbed Chicken
Slow Cooker Chicken
- 16 oz chicken breast - fresh or thawed, boneless, skinless
- 2 T extra virgin olive oil
- 2 T honey
- 2 T sweet heat spice rub
- sea salt and pepper - fresh ground
Sweet Heat Spice Rub
- 1/4 C brown sugar
- 1 T smoked paprika
- 1 T granulated sugar
- 1/2 T cayenne pepper
- 1/2 T chili powder
- 1/4 T garlic powder
- 1/8 T cinnamon
- Remove excess moisture from chicken by placing them between layers of paper towel and let sit for 5 minutes.
- Add chicken to slow cooker and season with fresh ground salt and pepper to taste.
- Drizzle with 1 T olive oil and 1 T honey. Sprinkle 1 T sweet heat spice rub.
- Flip chicken and repeat the last 2 steps.
- Cook on low for 6-8 hours (or longer)
- Place chicken covered on a microwave-safe glass dish and use your microwaves defrost setting to quickly defrost the chicken.
- Place chicken in a plastic zip-lock bag and put it in a shallow bowl filled with cold water, let sit for 5 minutes. Repeat.
