Slow Cooker Sweet Heat Spice Rubbed Chicken Recipe

Slow Cooker Sweet Heat Spice Rubbed Chicken is the perfect low-calorie, set-and-forget slow cooker chicken. Serve on salad or with fresh veggies.

My daughter-in-law was talking about this recipe yesterday and mentioned that this recipe for sweet heat spice-rubbed chicken is now a weekly staple for her family, which made me wonder why it wasn’t a staple in my home anymore.  

I already had chicken thawing in the fridge, so I grabbed my slow cooker, my sweet heat spice rub and put it in the slow cooker so dinner tonight will be both tasty and low-calorie. This chicken is filled with amazing flavor and will be a new family fav.

Slow cooker chicken is definitely a go-to for me, but sometimes I want my chicken on the dry side so I can shred it to top salads or a baked potato. This is the perfect slow cooker chicken for just that purpose.

This is one of my favorite set-and-forget slow cooker chicken recipes.  The long slow cooking infuses every bite of chicken with wonderful sweet and spicy goodness.

Ingredients

Slow Cooker Chicken

  • 16 oz chicken breast - fresh or thawed, boneless, skinless
  • 2 T extra virgin olive oil
  • 2 T honey
  • 2 T sweet heat spice rub
  • sea salt and pepper - fresh ground

Sweet Heat Spice Rub

  • 1/4 C brown sugar
  • 1 T smoked paprika
  • 1 T granulated sugar
  • 1/2 T cayenne pepper
  • 1/2 T chili powder
  • 1/4 T garlic powder
  • 1/8 T cinnamon

Instructions

  • Remove excess moisture from chicken by placing them between layers of paper towel and let sit for 5 minutes.
  • Add chicken to slow cooker and season with fresh ground salt and pepper to taste.
  • Drizzle with 1 T olive oil and 1 T honey.  Sprinkle 1 T sweet heat spice rub.
  • Flip chicken and repeat the last 2 steps.
  • Cook on low for 6-8 hours (or longer)

Notes

 
 
This chicken makes a great topping for a light summer salad or served with grilled vegetables.
 
Important Note About Chicken and Slow Cookers
Do not cook still-frozen chicken breasts in a slow cooker.  The slow cooker takes too long to heat and your chicken will be swimming in a warm pool of chicken juices as it thaws, potentially allowing dangerous bacteria to contaminate the chicken.
 
Speed Defrost Chicken
  • Place chicken covered on a microwave-safe glass dish and use your microwaves defrost setting to quickly defrost the chicken.
or
  • Place chicken in a plastic zip-lock bag and put it in a shallow bowl filled with cold water, let sit for 5 minutes.  Repeat.
