Simple, Stress-free recipes for a laid back low-key Easter.

 

This year as we are all sheltered at home, it’s more important than ever to count our blessings and share quality time with our families.

My husband and I have really struggled with the idea that we’d have to celebrate Easter without mass, without our kids, and without our traditional big family and friends gathering.

So we decided to deliver easter baskets to our adult children along with a full Easter meal they they can just heat and eat.

We’ve decided to cook a somewhat unusual Easter meal to make it easy to travel and heat and eat.

Everyone wanted something that was healthy-ish but also felt comforting so we’ve decided on vegetarian lasagna, with a simple Italian salad served Nina’s favorite garlic bread.  And for dessert we’ll have a Philladelphia tradition of Irish Potatoes (candies, no potatoes involved) – they are little bites of heaven.  Coconut and cream cheese balls rolled in cinnamon.  oh so good.

All the recipes are easy to make (several slow cooker – set-it and forget-it recipes) so you’ll be able to join in all the fun.

Stress-free Tips:

  • Keep it simple – Times like these call for familiar and comforting recipes.
  • Prep ahead of time – You can pop everything in the slow cooker the night before then the next morning just turn them on.  If you are serving a crudites platter or charcuterie board. prep everything in the morning and cover with plastic wrap and store in the fridge until game time.
  • Your Crockpot is your Best Friend – Confession #1 – I have 3 crockpots + a little one for keeping sauces warm and an electric wok that can do double duty as a slow cooker.  Confession #2 – Sometimes 3 just isn’t enough and I borrow from friends and neighbors.  Confession #3 – I have figured out how to make almost everything in my slow cooker.  You can cook in the crockpot and then use them to keep everything warm.  If I grill wings I’ll pop them in a crockpot to stay warm.  Works perfectly!  So embrace a slow cooker or 3.
