These quick simple roasted potatoes are one of my favorite ways to cook potatoes they are so good and so simple and easy to make.

This is my favorite way to serve potatoes.  I love the crispy outside and the fluffy inside.  I serve these with a side of sour cream for dipping.

Ingredients

  • 4 large potatoes
  • 2 T olive oil
  • 1 T Herbs de Provence
  • salt and pepper to taste

Instructions

  1. Peel potatoes.

  2. Cut potatoes into 1 1/2 inch cubes.

  3. In a microwave-safe bowl toss potatoes with oil.

  4. Toss with seasonings and salt and pepper to taste.

  5. Preheat oven to 400 degrees.

  6. Microwave on high for 5 minutes.  Stir and microwave for an additional 2 to 3 minutes, you want the potatoes to be pretty soft.

  7. Spread potatoes in a single layer on a sheet pan and roast for 20 minutes.

  8. Serve hot.

Recipe Notes

If you are not a fan of the microwave, you can follow the same recipe just add an additional 30 to 40 minutes in the oven.
