The perfect entree for a romantic New Years or Valentines Day Dinner for Two.  Serve with crusty bread and a simple salad for the perfect meal.

Ingredients

  • 2 T olive oil
  • 4 T butter
  • 5 cloves garlic finely minced
  • 1 Shallot finely minced
  • 1 cup seafood stock or clam juice
  • 1 cup white wine
  • ground black pepper
  • salt
  • 1 pinch saffron
  • 1 t crushed red pepper
  • 1 lobster tail split
  • 10 mussels
  • 10 clams
  • 10 shrimp
  • lemon wedges

Instructions

  1. In a 5 quart dutch oven, melt butter with the olive oil.
  2. Add garlic and shallot and sauté until onion becomes translucent.
  3. Add seafood broth or clam juice, white wine, bay leaf, saffron, plus salt and pepper to taste.
  4. Bring liquid to a boil and cook for 5 minutes.
  5. Lower to medium and keep broth at a strong simmer.
  6. Add the clams, mussels, and lobster and cook for 4 minutes.
  7. Add shrimp and cook an additional 4 minutes until clams and mussels have opened and shrimp are pink and opaque and the lobster shell is red meat tender. Adjust lobster cooking time depending on size - the rule of thumb is 1 minute per ounce.
  8. Serve Immediately.
