Homemade Keto Friendly Granola | Coconut Tart Cherry is the perfect grab and go breakfast and the perfect topping for yogurt.
Making granola always seemed mysterious. I never really thought about making it at home – in my mind granola came in a bag – end of story.
Then I needed more control over the ingredients in my food and that started my search for the perfect Keto friendly granola recipe.
Through a little trial and error, I came up with this mix. I think this granola is perfectly crunchy and tasty.
This is a great basic keto homemade friendly granola recipe and super easy to customize to include your favorite granola flavors.
Homemade Keto Friendly Granola | Coconut Tart Cherry
Ingredients
- 1 c. almonds - chopped
- 1 c. walnuts - chopped
- 1 c tart cherries - dried and chopped
- 1 c. unsweetened coconut flakes
- 1/4 c. sesame seeds
- 2 tbsp. flax seeds
- 2 tbsp. chia seeds
- 1/2 tsp. ground clove
- 1 1/2 tsp. ground cinnamon
- 1 tsp. pure vanilla extract
- 1/2 tsp. kosher salt
- 1 large egg white
- 1/4 c. melted coconut oil
Instructions
- Preheat oven to 350° and line a baking sheet parchment paper.
- In a large bowl, mix together almonds, walnuts, tart cherries, and coconut flakes, sesame seeds, flax seeds, and chia seeds. Stir in cloves, cinnamon, vanilla, and salt. Toss to coat.
- Beat egg white until foamy then stir into granola.
- Add coconut oil and stir until everything is well coated.
- Pour onto parchment paper lined baking sheet and spread into an even layer.
- Bake for 20 to 25 minutes, or until golden, gently stirring halfway through.
- Let cool completely. Then seal in an airtight container. Store at room temperature or refrigerate.
