Heirloom Tomato Basil and Fresh Mozzarella Salad
I love heirloom tomatoes and they are the star of this Heirloom Tomato Basil and Fresh Mozzarella Salad a twist on the traditional Caprese Salad.
Heirloom Basil and Fresh Tomato Salad
- 1 cup fresh small mozzarella balls
- 1 cup Heirloom cherry tomatoes - cut in half
- 10 small fresh basil leaves - chopped
- 1/4 cup extra-virgin olive oil
- 1 1/2 T aged balsamic vinegar - best quality
- Salt and pepper to taste
- 4 cups romaine lettuce - leave torn into bite size pieces
- Drain the mozzarella balls
- Place mozzarella and tomatoes in a bowl.
- Add 1/4 cup and 1 1/2 T aged balsamic vinegar to a small container and whisk to thoroughly combine
- Drizzle the vinegarette over the tomatoes and mozzarella balls, and season with a grind of sea salt and a couple of grinds of pepper.
- Sprinkle with chopped basil leaves
- Let sit @ room temperature for 10 - 15 minutes.
- Place romaine lettuce leaves into a large bowl.
- Toss with tomato mozzarella mixture.
- Serve and enjoy!
