Grilling the nectarines brings out the full flavor of the fruit. The sweet, tartness of the nectarines paired with gorgonzola is the perfect complement to the bite of arugula.
Arugula Salad with Grilled Nectarines and Gorgonzola
- 2 ripe nectarines
- 1 T Basil - torn
- 2 T gorgonzola cheese - or more to taste
- 4 T olive oil
- 1 T balsamic vinegar
- non-stick foil
- salt and pepper to taste
- Heat charcoal or electric grill to 400 degrees
- Core and cut nectarines into thin slices
- Toss nectarines with 1 T olive oil
- Place non-stick foil over grates
- Grill nectarines until they begin to caramelize, about 3-4 minutes
- Remove from nectarines from the grill.
- Mix 1 T balsamic vinegar with 3 T extra virgin olive oil with a pinch of salt and a couple grinds of fresh ground black pepper in a jar with a lid. Shake to mix.
- Toss Arugula with vinegarette
- Place nectarines on arugula, sprinkle with gorgonzola crumbles and torn basil.
- 10 Serve and enjoy!
