I love to pair fruit with cheese in salads.  I really love grilling my fruit before adding to the salad, it just brings out an earthy sweetness that I can’t resist.  Try this super delicious, low calorie, and healthy arugula salad with grilled nectarines – it’s sure to be a hit at your next cookout.

Grilling the nectarines brings out the full flavor of the fruit. The sweet, tartness of the nectarines paired with gorgonzola is the perfect complement to the bite of arugula.

Arugula Salad with Grilled Nectarines and Gorgonzola

Ingredients

  • 2 ripe nectarines
  • 1 T Basil torn
  • 2 T gorgonzola cheese or more to taste
  • Arugula
  • 4 T olive oil
  • 1 T balsamic vinegar
  • non-stick foil
  • salt and pepper to taste

Instructions

  1. Heat charcoal or electric grill to 400 degrees

  2. Core and cut nectarines into thin slices

  3. Toss nectarines with 1 T olive oil

  4. Place non-stick foil over grates

  5. Grill nectarines until they begin to caramelize, about 3-4 minutes

  6. Remove from nectarines from the grill.

  7. Mix 1 T balsamic vinegar with 3 T extra virgin olive oil with a pinch of salt and a couple grinds of fresh ground black pepper in a jar with a lid.  Shake to mix.

  8. Toss Arugula with vinegarette

  9. Place nectarines on arugula, sprinkle with gorgonzola crumbles and torn basil.

  10. 10 Serve and enjoy!

Recipe Notes

If your nectarines aren't perfectly ripe, you'll want to turn down the heat and cook them a little longer.

Vampiro Tequila Cocktail with Jalisco Sangrita. This spicy tequila cocktail mixed with a traditional Jalisco Sangrita. Sangrita’s are my new cocktail obsession. Sangrita or “little blood” has traditionally been served as a chaser for excellent quality tequila. It would have been a mixture of fruit juices and finely ground chili pepper. Many sangrita recipes call for tomato juice, but that would not have been part of the traditional recipe, the original recipe would have been made from leftover juice from fresh fruit salads and changed based on the fruits used.
