Easy Watermelon Mint Lemonade Recipe
Simple and Refreshing. This is a great way to use the leftover watermelon from weekend get-togethers and it’s the perfect drink for hanging out by the pool or the beach.

- 1 1/2 cups fresh squeezed lemon juice Approx. 6 lemons
- 2 cups watermelon juiced
- 1 cup water
- 1 cup sugar
- 3/4 cup fresh mint
- 4 to 6 cups cold water
Prepare a simple syrup using 1 cup water and 1 cup sugar.
Combine sugar and water in a saucepan. Bring the water and sugar to a boil, stirring, until sugar is dissolved. Allow simple syrup to cool, and then refrigerate. Or ** If you need to make this quickly or just don't want to wait for the syrup to cool combine the water and sugar in a container with a lid and shake vigorously until sugar has dissolved.
Juice the lemons (you want about 1 1/2 cups of lemon juice). You can strain the juice if you would like pulp-free lemonade.
Juice watermelon in a food processor or blender.
Muddle mint in a small bowl or cup.
Combine lemon juice, watermelon juice, muddled mint and simple syrup. Add 4 cups of cold water. Taste, continue adding water until you reach the desired balance of sweet and tart.
Serve over ice and enjoy!
You can adjust the proportions of lemon juice to simple syrup to change the sweetness or tartness of the lemonade depending on what you like.
Try replacing still water with sparkling water for a bubbly treat.
