This super easy watermelon ginger sparkling water recipe is one of my favorites.  I love bubbles in my water. I bought my first watermelon of the season yesterday and it’s amazingly delicious. It will be perfect for this easy watermelon ginger sparkling water recipe. It’s going to make a perfectly sweet and spicy sparkling water.

I make this recipe at least once a week during watermelon season, it’s such a special treat after a winter of really bad or no watermelon.  + it has the added benefit of being a healthy alternative to soda or a cocktail.  A great mocktail for your next get together.

Easy Watermelon Ginger Sparkling Water Recipe

The combination of sweet, summer-ripe watermelon and spicy ginger and sparkling water make a delicious beverage to go with BBQ or other spicy dishes.

  • 10 cups 1-inch pieces seedless watermelon rind removed
  • 1 cup cold coconut water
  • 3 cups sparkling water this is a 750 ml bottle
  • 1/3 cup fresh lime juice
  • 1 1/2 tablespoons fresh ginger juice from Ginger People. Or you can make your own see notes below
  • Lime wheels for garnish optional

Instructions

Preparation

  1. Working in batches place watermelon and a little coconut water in a blender and blend until smooth.
  2. Pour mixture into a pitcher.
  3. Continue this process for remaining watermelon and coconut water.
  4. Add sparkling water, lime juice, and ginger juice to the pitcher and stir to blend.
  5. Refrigerate until cold, at least 3 hours. Keep chilled. Stir before serving.
  6. Serve over crushed ice and garnish with a lime wheel if desired.

Recipe Notes

Bottled ginger juice is available at most grocery stores and certainly at Whole Foods.  Bottled juice is so much more convenient, but for the purists out there here's how to make ginger juice. 

*To make ginger juice, peel a 3-ounce piece of ginger and grate it over a plate, put the grated ginger in a fine-mesh sieve and press to release the juices.

    Sooooo refreshing and simple to make. I don’t like crushed ice but still good with lots of cubes to make it ice cold.
