Easy Lemon Rosemary Grilled Chicken Recipe

Simple and easy lemon rosemary grilled chicken will help you get dinner on the table in a flash and have your family raving.  This will absolutely become one of your go-to recipes for both weeknight meals and special dinners.

Ingredients

  • 2 lemons
  • 4 bone-in skin-on chicken breasts or 1 whole chicken
  • 1 tbsp of dried rosemary or several sprigs of fresh
  • 2 tbsp olive oil
  • sea salt and pepper to taste
  • honey to drizzle
  • heavy duty tin foil
  • grill or fire prepared for indirect cooking

Instructions

  1. Juice one lemon and combine with olive oil, rosemary, salt, and pepper. This will make a thin paste.
  2. Loosen skin of the chicken and rub mixture under skin.
  3. Place chicken on 2 layers of tin foil.
  4. Slice the other lemon into rounds.
  5. Place lemon slices on top of chicken and drizzle with honey.
  6. Close foil packet and place on cooking are of prepared grill or campfire.
  7. Cooking time will vary depending on grill or fire temperature. Cook completely until juices run clear. Check at 20 minutes.

Recipe Notes

Chicken packets can be prepared a day or two in advance to make cooking at camp super simple. Just remember to keep the chicken chilled.
