Amazing Copycat Cracker Barrel™ Hash Brown Casserole Recipe

Ooey Gooey Cheesiness in a casserole with potatoes - what's not to love? Creamy and delicious just like the real thing. When my daughter became a vegetarian she really missed the Cracker Barrel™ Hash Brown Casserole (and so many other vegetarian dishes restaurants sneak chicken broth into).

Ingredients

  • 2 pounds fresh or frozen hash browns - if frozen, thawed
  • 1/2 cup butter - melted
  • 1 cup cream cheese, room temperature
  • 1 pint sour cream
  • 1 t garlic powder
  • 1/2 t onion powder
  • 1/2 t Italian seasoning blend
  • 1/4 t celery seeds
  • 1 t salt
  • 1 t pepper
  • 1/2 cup sweet onion - finely chopped (optional)
  • 2 cups grated sharp cheddar cheese - 1/2 cup reserved

Instructions

  • Preheat oven to 400° F. Prepare an 11 x 14-inch casserole or baking dish by buttering the sides or using your favorite cooking spray.
  • In large bowl, combine all ingredients (except 1/2 cup of reserved cheese) and fold ingredients to blend.
  • Spread potato mixture evenly in the prepared pan.
  • Top with reserved cheese.
  • Bake for 45 minutes until top is golden brown. If the top is getting too brown cover with foil.  If the top isn't brown enough, broil for 5 minutes before serving.
  • Let rest 5 minutes before serving hot.

Notes

Stress-free Entertaining Option:
Place everything in a slow cooker and cook overnight and you'll have one less thing to do for breakfast the next morning.  I use this method often during the holidays or when I have a house full of guests.  Super easy and so good.
