Amazing Copycat Cracker Barrel™ Hash Brown Casserole Recipe

Vegetarian Copycat Cracker Barrel™ Hash Brown Casserole
- 2 pounds fresh or frozen hash browns if frozen, thawed
- 1/2 cup butter melted
- 1 cup cream cheese, room temperature
- 1 pint sour cream
- 1 t garlic powder
- 1/2 t onion powder
- 1/2 t Italian seasoning blend
- 1/4 t celery seeds
- 1 t salt
- 1 t pepper
- 1/2 cup sweet onion finely chopped (optional)
- 2 cups grated sharp cheddar cheese 1/2 cup reserved
Preheat oven to 400° F. Prepare an 11 x 14-inch casserole or baking dish by buttering the sides or using your favorite cooking spray.
In large bowl, combine all ingredients (except 1/2 cup of reserved cheese) and fold ingredients to blend.
Spread potato mixture evenly in the prepared pan.
Top with reserved cheese.
Bake for 45 minutes until top is golden brown. If the top is getting too brown cover with foil. If the top isn't brown enough, broil for 5 minutes before serving.
Let rest 5 minutes before serving hot.

Place everything in a slow cooker and cook overnight and you'll have one less thing to do for breakfast the next morning. I use this method often during the holidays or when I have a house full of guests. Super easy and so good.
