Classic German Potato Salad Recipe


This Classic German Potato Salad is always a hit at potlucks, picnics, and barbecues. Everythings better with bacon and potato salad is no different. The dressing is vinegar and mustard based and absolutely delicious.

A bacon-studded potato salad made with a dressing of bacon fat, vinegar, seasonings and sometimes sugar. German potato salad can be served hot, cold or at room temperature.


  • 6 large potatoes diced
  • 8 slices bacon diced
  • 1 large onion diced
  • 2 t of brown German mustard
  • 1-2 t flour more if needed
  • salt and pepper
  • 2 c milk


  1. Bring a large pot of salted water to a boil. Add potatoes; cook until tender but not mushy, 10 - 15 minutes. Drain and chop.
  2. Cook bacon until very crispy. Remove bacon from skillet and drain on paper towel, crumble and set aside. Leave the bacon fat in the skillet.

  3. Add the flour, sugar, water, and vinegar to skillet and cook in reserved bacon fat over medium heat until it thickens.
  4. Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm or cold.

Recipe Notes

This can be easily be made in advance and refrigerated until ready to serve.
