Classic German Potato Salad Recipe
This Classic German Potato Salad is always a hit at potlucks, picnics, and barbecues. Everythings better with bacon and potato salad is no different. The dressing is vinegar and mustard based and absolutely delicious.
Classic German Potato Salad
- 6 large potatoes - diced
- 8 slices bacon - diced
- 1 large onion - diced
- 2 t of brown German mustard
- 1-2 t flour - more if needed
- salt and pepper
- 2 c milk
- Bring a large pot of salted water to a boil. Add potatoes; cook until tender but not mushy, 10 - 15 minutes. Drain and chop.
- Cook bacon until very crispy. Remove bacon from skillet and drain on paper towel, crumble and set aside. Leave the bacon fat in the skillet.
- Add the flour, sugar, water, and vinegar to skillet and cook in reserved bacon fat over medium heat until it thickens.
- Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm or cold.
