Cambozola, with Pistachio and Almond, Phyllo Cup Drizzled with Honey Recipe

Think brie meet gorgonzola – that’s Cambozola.  Cambozola perfectly combines the creaminess of brie with the sharpness of Gorgonzola for a complex savory, nutty flavor with a subtle sweetness, that pairs well with nuts and honey

For an easy appetizer bite, combine cambozola cheese with pistachio and almonds in a phyllo cup, then drizzle with a little honey and you have a heavenly taste treat.   Drizzled with Honey Recipe.

The creamy texture of a triple creme brie and gorgonzola make Cambozola a unique and flavorful cheese that pairs exceptionally well with nuts and honey.

Ingredients

  • 2 T salted butter
  • 24 almonds - roasted and salted
  • 12 oz Cambozola* - cut into 24 pieces and kept very cold
  • 48 phyllo dough - cut into 4" x 4" squares
  • 24 pistachios
  • 1 T honey
  • 1 mini muffin tins
  • cooking spray

Instructions

  • Preheat oven to 425 degrees.
  • Melt butter and set aside.
  • Whisk egg with 1 T of water until smooth
  • Liberally spray muffin tin with cooking spray
  • Place 1 square of phyllo dough into the muffin tin.  Then add a second phyllo sheet offset and rotated 45 degrees
  • Lightly brush phyllo sheets with melted butter.
  • Bake Phyllo cups for 5 minutes.
  • Place a piece of Cambozola cheese in the center of the phyllo cup
  • Top an almond and a pistachio
  • Bake another 2 - 3 minutes until cheese is melty
  • Drizzle with a couple of drops of honey
  • Serve immediately

Notes

 
*Place brie in the freezer 30 minutes prior to cutting the brie.  This will make it a little firmer and make it easier to work with.
These can be made a day in advance and stored tightly covered in the refrigerator.  Just pop them in the oven just before serving and cook for about 10 minutes.  Serve warm.
