Buffalo Chicken Beggars Purse Recipe

Everyone loves spicy Buffalo chicken. Now you can serve this yummy favorite in a tidy little bundle the perfect finger food.
The Buffalo Chicken stuffing can be made the day before to make assembling these super easy and stress-free.
Serve with thin celery and carrot sticks, extra Buffalo Sauce for dipping, ranch, and blue cheese dressing.
Buffalo Chicken Beggars Purse Recipe
Ingredients
- 2 T salted butter
- 1 egg - beaten with 1 T of water
- 12 oz cooked chicken breast - rotisserie or baked
- 4 oz Buffalo Sauce - *see recipe or use bottled
- 2 oz ranch dressing
- 4 oz Blue Cheese - crumbles
- 4 oz Mexican cheese blend
- 24 wonton wrappers - large
- Parchment paper
Instructions
- Preheat oven to 425 degrees.
- Melt butter and set aside.
- Cut baked chicken into 1/2-inch bite size pieces or shred rotisserie chicken into bite-size pieces
- Toss chicken with Buffalo sauce and ranch dressing
- In a small saucepan heat chicken with cheeses and cook until cheese starts to melt and chicken is just heated through.
- Whisk egg with 1 T of water until smooth
- Line a baking sheet with parchment paper
- Place 24 wonton wrapper on the parchment paper
- Lightly brush wonton wrappers with melted butter
- Place a small scoop of buffalo chicken mixture in the center of each wonton wrapper.
To Make a Wonton or Beggars Purse
- Wonton:Fold diagonally, then using a fork seal wontons
- Beggars Purse:Fold corners diagonally to the center, pinching together the opposite corners holding the pouch in the palm of one hand, gently twist the top of the pouch to seal.
- Brush each purse with butter
- Brush each purse with egg-wash
- Place on a parchment-lined sheet pan. Bake for 10 to 12 minutes or until the purses are golden brown
- Serve warm
