Brie with Lemon Curd Beggars Purse Recipe

Brie pairs well with just about any jam, jelly or curd. I love the combination of lemon curd, rosemary, and brie for these little appetizer bites.

These are so simple to make, look fabulous and taste amazing!

Ingredients

  • 2 T salted butter
  • 1 egg beaten with 1 T of water
  • 2 T lemon curd
  • 24 almonds roasted and salted
  • 12 oz Brie* cut into 24 pieces and kept very cold
  • 24 wonton wrappers large
  • Parchment paper
  • 1/2 T rosemary fresh and finely chopped

Instructions

  1. Preheat oven to 425 degrees.
  2. Melt butter and set aside.
  3. Whisk egg with 1 T of water until smooth
  4. Line a baking sheet with parchment paper
  5. Place 24 wonton wrapper on the parchment paper
  6. Lightly brush wonton wrappers with melted butter.
  7. Place a piece of brie in the center of the wonton wrapper
  8. Top brie with a dollop of lemon curd and an almond

To Make the Purse

  1. Fold corners diagonally to the center, pinching together the opposite corners
  2. Hold the pouch in the palm of one hand, gently twist the top of the pouch to seal.
  3. Brush each purse with butter
  4. Brush each purse with egg-wash
  5. Place on a parchment-lined sheet pan. Bake for 8 to 10 minutes or until the purses are golden brown
  6. Serve warm

Recipe Notes

 

*Place brie in the freezer 30 minutes prior to cutting the brie.  This will make it a little firmer and make it easier to work with.

These can be made a day in advance and stored tightly covered in the refrigerator.  Just pop them in the oven just before serving and cook for about 10 minutes.  Serve warm.
