This blue cheese Potato Chip Recipe makes a great side dish for barbecues. I love these. I had a version of these when I visited my sister in The Woodland’s Texas. There’s a restaurant that served a version of these as an appetizer. I had to try and come up with a version to make at home.

Okay so the recipe is super easy to make but sometimes you just need a shortcut to make things even easier.  I’ve got a super simple stress-free version.  See the note below to get the quick tip.

Blue Cheese Potato Chip Recipe

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Servings: 8 appetizers or sides

Ingredients

  • 2 large baking potatoes
  • 4 oz blue cheese
  • 4 cloves garlic minced - if you have roasted garlic, use that
  • Salt and Pepper - to taste
  • 2 t Olive Oil

Instructions

  • Peel potatoes
  • Slice very thinly with a mandolin
  • As you slice place slices in a large bowl of salted ice water
  • Dry potatoes between paper towels

To Bake:

  • Toss with olive oil and season with salt and pepper
  • Place on a wire rack over a foil-lined sheet pan at 450 degrees for about 30 minutes or until browned and crispy.

To Deep Fry:

  • Season potatoes with salt and pepper
  • Deep Fry on high for 1- 2 minutes, until browned and crispy
  • Drain on paper towel
  • To finish:
  • Once potatoes are cooked sprinkle with blue cheese crumbles and minced garlic
  • Place under a broiler set on high until cheese is bubbly and starting to brown.

Notes

Super Easy Stress-free Option:
Spread a bag of thick-cut kettle style salt-and-vinegar potato chips on a piece of stick-resistant tin foil and top with crumbled blue cheese to taste and add chopped garlic for a pungent twist.  Heat on the grill or under a broiler until blue cheese bubbles.
